EMSOP Associate Professor Mary Wagner, her colleague, Professor Yanhong Jin, School of Environmental and Biological Sciences, and selected research students have undertaken “A Kitchen Challenge, Nudging College Students Toward Healthy Eating.” Collaborating with a nonprofit organization, Eating for Your Health, they developed a “Healthy Eating Challenge” to encourage healthy food choices among college students. Their research highlights the use of an integrated, evidence-based, hands-on program to teach behavior models and modifications that can support better personal decisions and better clinical support for helping patients achieve healthier eating habits.
